These Thai Chicken Skewers with Cucumber Yogurt Dip have the most amazing flavor! Ingredients for Thai Chicken Skewers
Chicken (chicken breasts or boneless skinless chicken thighs) Marinade Garlic Cilantro Fish Sauce Sesame oil Curry powder Cumin Paprika Cucumber Dipping Sauce Greek yogurt Cucumber Carrot Cilantro Milk Salt and black pepper (to taste) Optional Ingredients (can be added to the skewer for more flavor or as a garnish) Red bell peppers Red onion Zucchini Sliced limes (for garnish)
Cooking Methods
We love cooking these skewers on our outdoor gas grill or charcoal grill but sometimes the weather just doesn’t cooperate. An indoor grill pan or griddle is a solid option if you can’t use an outdoor grill. You can also cook these skewers in the oven at 350-degrees F for 15-20 minutes or you can place them in the broiler for 4-5 minutes on each side or until cooke through. No matter how you cook them, be sure to soak the skewers for at least 20 minutes if they are wooden. Metal skewers can also be used if wooden skewers aren’t available.
What Goes Well with Grilled Chicken Skewers
We love serving these skewers with plain or flavored Jasmine rice or roasted vegetables. We like to flavor our Jasmine rice with a little lemon juice or lime juice and some chopped cilantro to give it a little extra boost. Serve with soy sauce on the side if needed.
