Baking Method

Starbucks method of making egg bites is to cook them sous vide. Sous vide is when you cook something by vacuuming-sealing it and then placing it in warm water to slowly cook. This creates an evenly cooked egg and makes sure nothing gets overcooked. Because this technique requires a sous vide machine, we bake our egg bites. They taste great! However, if you want to achieve a texture close to the sous vide eggs, you can put a pan of boiling water in the oven at the same time as the egg bites are baking.

Helpful Tips

If the egg bites aren’t coming out of the muffin tin, slide a plastic spoon around the edges to release the sides. If you want to make your egg bites a little bit more like the Starbucks ones you can add a pan of boiling water to the bottom rack of the oven while the egg bites are baking. Store leftovers in the fridge and heat up in the microwave.
