White vinegar – With all the other creamy ingredients, you need just a little bit of acidity to cut through and balance things out. Sriracha – This spicy red sauce adds a little kick to this classic appetizer. When I want my deviled eggs extra spicy, I add Sriracha to the yolk mixture and then drizzle it over the top as well. Cayenne Pepper: Cayenne pepper is a classic choice for adding heat to deviled eggs. You can sprinkle a little bit of cayenne pepper into the yolk mixture, or even dust it lightly on top of the finished deviled eggs for an extra kick instead of paprika. Hot Sauce: For this recipe we use Sriracha but your favorite hot sauce will work! Tabasco, Frank’s, Cholula, or any other hot sauce can add both heat and flavor. They all taste so different so it really depends what flavor profile you are going for. Diced Jalapeños or Other Peppers: Finely dice jalapeños, serranos, or other hot peppers and mix them into the yolk mixture. You can use fresh peppers or pickled ones for added flavor. Spicy Mustard: Use spicy mustard instead of traditional mustard in the yolk mixture. Horseradish: Add prepared horseradish to the yolk mixture for a spicy kick. Horseradish pairs well with eggs and adds a unique heat. Wasabi: For a different kind of heat, the kind of heat that gets you right in the nose, try adding wasabi paste to the yolk mixture. Wasabi will give your deviled eggs a spicy kick with a hint of Japanese flavor.
Tips for Making the Perfect Hard-Boiled Eggs
The first step to delicious spicy deviled eggs is having the best hard-boiled eggs. These are helpful tips to ensure your hard-boiled eggs are perfect every time. Follow these steps for success!
Old eggs – The best eggs to hard boil are those that are at least three days old. Super fresh eggs tend to be harder to peel. Large eggs – The bigger the eggs the better! This will help hold in more of the filling as well as have a thicker outside. If you have your own chicken eggs that is perfect for the shells are harder and thicker. The eggs won’t fall apart as easily. Warm up the eggs – Don’t put your eggs into already boiling water. Place them in the pan first, then add cold water until there’s about an inch or so of water covering the eggs. Don’t overboil – The key to making perfect eggs on the inside is to not over-boil. If they are too hot for too long, then you will get that greenish-grayish ring around the yolk. Secret ingredient – Here is our secret ingredient: add a little baking soda (about ½ teaspoon or a little less) to the water while boiling. This will make it easier to peel the eggs later on. Ice bath – If you are going to peel the eggs right away to make these sriracha deviled eggs, then give them a little crack and plunge them into an ice water bath. Only do this if you are going to peel them immediately after. If you are saving the eggs for later, just put them straight into the ice water. Storing Spicy Deviled Eggs
Because spicy deviled eggs need to be served cold or chilled, it is best to follow these helpful storing tips when making them. They are great for making ahead of time as well as storing in the refrigerator. The key is to keep the sriracha deviled eggs in a cool place and as much as possible!
Making ahead – Deviled eggs are good in the fridge for about two days, so you can make them a little bit in advance. Once you set them out, they are only good for two hours. Refrigerate – Place the sriracha deviled eggs in an airtight container and store in in the fridge for two to three days. The eggs need to be covered with a container or plastic wrap so the eggs do not dry out. Temperature – To have safe sriracha deviled eggs, the fridge temperature needs to be around 40 degrees Fahrenheit or below to ensure food safety. Freezing – It is best not to freeze sriracha deviled eggs.
