Simply grab whatever kind you like best off the shelf and add it to the batter as directed below for the best peanut butter pancakes ever! Room temperature – Let your ingredients reach room temperature before mixing them. This will help mix easily and have a smooth batter. Dry ingredients – Whisk the dry ingredients together before adding to the wet ingredients. This is similar to a sifting process that allows the air to escape from the dry ingredients giving pancakes that fluffy appearance. Don’t overmix – Gently mix the ingredients until they are well combined. Do not overmix though. Overmixing the ingredients will make a tough pancake. Rest the batter – After mixing the ingredients, let them rest on the countertop while the ingredients meld together. Grease – Use butter or a cooking spray to coat the griddle or pan that you are using. Lightly grease the cooking surface. The pancakes won’t stick with grease on them. Pressing down – It is always a habit to flip the pancake and press down with a spatula on top of the cooked side of the pancake. Try not to press down. It will release moisture out of the pancake and flatten it. Oven – Keep the pancakes warm in the oven by preheating the oven to a low degree. Place the cooked pancakes in a baking dish or baking sheet to keep warm while cooking the rest of the pancake batter. Can I Substitute the Buttermilk?

You really want to use buttermilk for these pancakes and if you’re like me, you may not always have it handy. I make my own buttermilk at home by using one tablespoon of white vinegar or lemon juice mixed with a cup of milk. Stir together and let it sit for 5 minutes before adding to the pancake batter.

Nutella Syrup

½ cup unsalted butter 1/2 cup granulated sugar 1/2 cup buttermilk 1/2 teaspoon baking soda 1/2 teaspoon pure vanilla extract 2 heaping tablespoons Nutella

Add butter, sugar and buttermilk into a saucepan over medium heat. Stir until melted. When mixture starts to boil reduce heat and stir in baking soda and vanilla. Syrup will bubble and rise. Remove from heat and stir in Nutella until melted. Drizzle over pancakes.

Storing Pancakes in the Fridge or Freezer

It is always nice to have leftover pancakes for the next day or meal prepping for the week! They are easy to make, store, and reheat. Get ready for fluffy peanut butter pancakes on the daily!

Refrigerator – Place the leftovers in the fridge for two to three days in an airtight container. Freezer – Flash freeze your pancakes ahead of time.
