This dish is a heavenly combination of two of my very favorite things: corn and cheese. I mean, how could you go wrong here? The crunchy corn combined with the hot, gooey cheese hits the spot every time. The last time I made corn cheese was when we were on vacation with some friends at the coast. After a long day at the beach we came in and made this and it was absolutely devoured in a matter of minutes. It was supposed to be served along with dinner but no one could hold out quite that long. It was just too good! Corn cheese if often eaten as a side dish along Korean Barbeque, but it can also be served on its own as an appetizer. Some even like to put a big scoop of it on top of a fresh bowl of ramen (haven’t tried it yet but it definitely piques my interest).
Corn- typically, canned corn is used. It’s also easier! If using canned corn, be sure to drain and thoroughly rinse/dry corn before use. But you can also use fresh corn, try grilled or fresh cooked. If you use frozen corn, be sure to let it thaw first. Cream cheese- let your cream cheese soften before you use it. Mayonnaise- My favorite is Best Foods, but you can use whatever your favorite is! Kewpie mayo is also a popular choice for this dish. Cheese- mozzarella is the most commonly used cheese in this recipe. Green onion – gives a nice, fresh flavor and crunch Salt and pepper
How to make corn cheese:
Combine ingredients – First, combine all of your ingredients in a bowl, saving ½ cup of cheese.
Bake – Transfer the mixture into an oven-safe dish or cast iron skillet and bake for 13-15 minutes.
Broil – Sprinkle remaining cheese over the top and broil until cheese gets golden and bubbly.
Garnish – Garnish with green onion and serve
Use any kind of baking dish – You can also make this in a baking dish or pie plate if you don’t have a cast iron skillet.
Use Fresh Corn – Try it with grilled corn or fresh cooked corn for a different flavor.
Make it a Dip – It’s usually served as a side dish but it can also be served with pita chips, sliced baguette, bread pieces, tortilla chips, or crackers.
