What are Greek Fries?
Greek Fries, or patates tiganites, are your classic French fry base, but showered, bathed, and anointed in delicious Mediterranean herbs and toppings. Every fry is flavorful, covered in a mixture of dried herbs and fresh herbs such as dried oregano, dill, crumbled feta cheese, a squeeze of lemon, red onion, and the essential, a sprinkle of olive oil. Dipping sauce varies, some people like tzatziki, while others like a lemony aioli. The consensus is that these fries are crispy, ultra flavorful, and they pack a flavorful punch. While it’s contested where they originated, we know they are greatly enjoyed in Greece, and everywhere. It seems no one can get enough of these fries!
Feta Dip
Feta Dip is an optional dipping sauce, it is refreshing and compliments the Greek Fries really well. It is simple to make! Combine Greek yogurt, feta cheese, mayonnaise, lemon juice, salt, pepper, fresh dill, and fresh parsley in a blender or food processor and blend until smooth. How to Make Greek Fries
To begin, wash the potatoes and cut them into your desired fry shape. Soak in cold water for at least 30 minutes. Soaking for longer results in crispier fries. Drain the fries and pat them dry. Add the fries to a bowl and toss in oil and spices. Place the potatoes in a single layer on a baking sheet. Try to spread them out so that they are not touching. Bake at 375 for 20 minutes. Flip the fries then turn the oven up to 425 and bake for 20-25 more minutes. If you want extra crispiness, broil for a few minutes until the fries are golden brown and crisp to your liking. Place fries on a plate or platter and top with feta cheese and fresh dill.
