They are perfect for back to school lunches, after school snacks, or to easily whip them up for a party or event. Already have an account? When creating this recipe I knew I wanted to take the Rice Krispies Treats we know and love and make them even Bolder. As a big fan of Funfetti Cake, I was so excited to see what I could develop. By adding Fruity Pebbles cereal and plenty of melted white chocolate I created a new way to enjoy Rice Krispies Treats, and man are they yummy!
This recipe really could not be easier to whip up. All you do is combine all of your ingredients in a bowl, let them set up in a big tray and cut them into thick squares. They look every bit as as good as they taste, and these rainbow-speckled treats are perfect to make with your kids.

This recipe uses Fruity Pebbles cereal to make it colorful. If you can’t find this, use an equal amount of Rice Krispie cereal and mix ½ cup (3 ½ oz/100 g) of sprinkles. You can use either full sized or mini marshmallows to make this recipe. Go by weight for the most accurate measurement. If you don’t have a kitchen scale, look on the bag the marshmallows came in. There is usually a weight printed on there. Marshmallows and butter can be melted on the stove if you don’t have a microwave. Use a large, heavy bottomed pot over low heat, stirring constantly to prevent burning, until fully melted. Use low heat or short microwave spurts when melting marshmallows and stop cooking as soon as the marshmallows are melted. Overheated marshmallows can caramelize the sugar and result in hard rice krispies. When mixing the cereal with the melted marshmallows, be gentle to keep the Fruity Pebbles intact. This will keep your treats looking their best. For an extra special handheld treat, fill Homemade Ice Cream Cones (or store bought) with the Rice Krispie Treat while it’s still warm and let set before serving. Kids absolutely love this.
