We love Funfetti Cake Mix Cookies at our house. My husband is particularly fond of anything that starts with the word “funfetti.” I don’t know who at Pillsbury came up with this word, but it’s brilliant! This recipe is a breeze because you can take a simple box of cake mix and turn it into soft, fluffy, moist cookies. The festive colorful sprinkles and the birthday cake taste can turn any day into a celebration. It’s one of my favorite things to make with the kids in the kitchen because they can help with every step.
Ingredients in Funfetti Cake Mix Cookies
It’s a win any day I can make cookies with 3 ingredients. There is a 4th optional ingredient, rainbow sprinkles, if you want to add an extra touch of color to the top of the cookies.
Funfetti Cake Mix – Pillsbury has the official trademark for the word “Funfetti” Cake mix, however, you can use any rainbow sprinkle cake mix to make these funfetti cookies. You don’t need to add anything to the cake batter other than what we list in this recipe. Vegetable Oil – I like to stir in vegetable oil for these Funfetti Cake Mix cookies, but you can use coconut oil if desired. Either option will give them a soft texture. Eggs – Two large eggs will do the trick for this recipe. Sprinkles (Optional) – I like to use the rainbow jimmies because they keep their shape better and don’t dissolve into the confetti cake mix. Nonpareils tend to do this.
Why Use a Cake Mix?
Admittedly, this is a simple recipe. There are times I love to spend all day in the kitchen testing, chilling, baking (and sampling!) all kinds of cookie recipes from scratch. But there are also days I want warm cookies coming out of the oven without the mess of measuring spoons and a bunch of ingredients. This is especially true when young children are part of the equation. Can anyone relate? A cake mix basically replaces all of the dry ingredients like flour, salt, and soda. It even replaces the need for adding vanilla extract. The only two ingredients left are oil and eggs. And, the result is still rewarding. These cookies are chewy and taste great!
