Fresh Strawberries in a Pie

All summer long I am craving fresh fruit! There’s just something perfect about a sweet and tart and juicy piece of fruit when it is hot outside. So, naturally, I am obsessed with this Fresh Strawberry Pie recipe. Fruit pies make a great addition to any BBQ, potluck, or dinner party. Your friends and family will be begging you for the recipe!

Ingredients in Strawberry Pie

our perfect homemade pie crust – baked and cooled fresh strawberries – hulled and sliced water corn starch sugar salt whipped cream or ice cream for topping

Step-By-Step Instructions

First you want to start with your pie crust. You can make this step as involved or as easy as you want. I usually use our Perfect Pie Crust recipe, but I have definitely used store-bought pie crust before. No judgement here! Bake up your pie crust and let it cool while you make the filling. Hull and slice your strawberries. Take about one cup of the berries and lightly crush them. Add them to a saucepan with ¾ cups water. Bring to a boil, occasionally stir, and let boil for 3 minutes. Remove the berries from the juice, and leave the juice in the pot. Whisk in the cornstarch and sugar. Simmer until it becomes thick. Remove from the heat. Add the rest of the sliced berries to a large bowl. Pour the glaze over the berries and mix until the berries are coated. Pour the filling into the pie crust. Refrigerate until the filling sets, about 4 hours at least. Lastly, top with whipped cream or ice cream and serve.

Strawberries are grown in every single U.S. state and Canadian province. California by far grows the most strawberries, it produces 75% of crops in the United States. About 1 billion pounds of strawberries are produced each year in California alone, each acre of land produces an average of 21 tons a year. Each year, 23,000 acres are planted in California. Peak harvesting season in California is from April through June where 10 million baskets of strawberries are shipped daily. Strawberries have a lot of history. Native Americans were eating strawberries way before Europeans landed in North America. Ancient Romans used berries to treat everything from depression to fever and sore throats.
