This is a classic egg salad recipe made with simple ingredients, but great flavor! It is a great protein-packed lunch or snack option. The best egg salad recipe hack is to make it with all those leftover dyed Easter eggs.
Ingredients in Egg Salad Recipe
Hard Boiled Eggs – use our Instant Pot Hard Boiled Eggs or Stovetop Hardboiled Eggs recipe for delicious, easy peel hard boiled eggs. Mayonnaise – you can also use mashed avocado or Greek yogurt instead of mayo. Mustard – we like to use yellow mustard, but you can also use dijon mustard. Dill Pickles – if you’re in a hurry, then use dill pickle relish. Kosher Salt and Black Pepper Fresh Dill – you can use dried but I just love the flavor that fresh herbs bring to a recipe. Optional Add-ins: diced celery, diced red onion, chives, fresh parsley, capers, paprika, lemon juice
How to Eat Egg Salad
Obviously, the most common way to enjoy your egg salad is in an egg salad sandwich. However, you can also eat egg salad on toast or in a lettuce wrap. For an extra dose of veggies, serve it on a bed of spinach or inside of a hollowed out cucumber of bell pepper. For more crunch, eat it by using it as a dip for crackers or pita chips.
Tips for Making the Perfect Hard Boiled Eggs
The best eggs to hard boil are those that are at least three days old. Super fresh eggs tend to be harder to peel. Don’t put your eggs into already boiling water. Place them in the pan first, then add cold water until there’s about an inch of water covering the eggs. The key to making perfect eggs on the inside is to not over boil eggs. If they’re too hot for too long, then you will get that greenish-grayish ring around the yolk. Here’s our secret ingredient: add a little baking soda (about ½ teaspoon or a little less) to the water while boiling. This will make it easier to peel the eggs later on. If you’re going to peel the eggs right away to make an Egg Salad Sandwich, then give them a little crack and plunge them in an ice water bath. Only do this if you’re going to peel them immediately after. If you’re saving the eggs for later, just put them straight into the ice water.
