Chocolate Melting Process
There are multiple ways to melt down your chocolate wafers, depending on your preference.
Pour your chocolate into a microwave-safe bowl and heat it in the microwave about 20-30 second intervals. Take time to stir in between each interval, until it’s melted and smooth. Be careful not to overheat the chocolate. Use a double boiler to melt the chocolate on the stovetop. Fill the bottom pot with water and bring to a low boil; then place the chocolate in a heat-proof bowl, and melt, stirring frequently. Melt in a saucepan over medium heat, stirring constantly.
Dipping and Decorating Pretzel Rods
Dip about two-thirds of the pretzel rod into the melted chocolate. The best way is to hold one end of the pretzel rod and let the other end rest in the bowl. Use a spoon to pour chocolate onto all sides of the pretzel and let it drip down the pretzel back into the bowl. Another popular method is to pour the warm chocolate into a tall glass for dipping. Over the wet chocolate, sprinkle toppings over the rods and let them cool on a prepared baking sheet lined with parchment paper. If the chocolate starts to get hard or is hardening too fast while you are dipping, place the chocolate back in the microwave to re-melt according to package directions. If the toppings are falling off the dipped pretzel, give the chocolate a minute or two to cool and this will help the toppings stick better.
How to Store Dipped Pretzel Rods
Give the pretzels time to cool and harden before serving. Store in plastic bags or an airtight container at room temperature. They’ll stay nice and fresh for up to two weeks. Wrap a few in cellophane bags to give out as holiday gifts,
