This Grilled Chicken Pasta Primavera recipe is a twist on a version that my mother in law makes, and just happens to be my husband’s favorite pasta dish. She was so kind to share this recipe with me so I can share it with you. The only thing I switched was that we grilled the chicken on an outdoor grill instead of cooking it over the stove. Tender grilled chicken paired with fresh summer veggies and garden herbs with a healthy sauce makes this a perfect summer supper that you can enjoy on the patio with a tossed salad, crusty bread and a tall glass of lemonade.
Ingredients in Chicken Primavera
Boneless Skinless Chicken Breasts – pound each breast flat with a rolling pin or mallet for even cooking. Balsamic Marinade – our favorite chicken marinade! It has balsamic vinegar, olive oil, and a packet of Italian dressing mix. Minced Garlic – fresh is always best, especially in this recipe! Olive Oil or Butter Tomatoes – you can use Roma tomatoes, cherry tomatoes, or grape tomatoes. I like using heirloom cherry tomatoes because they look so pretty! Yellow Squash Chicken Broth Chicken Boullion – the granules not the cubes Heavy Cream – this is optional but I love how it makes a more creamy chicken primavera sauce Kosher Salt and Black Pepper Fresh Basil Fresh Grated Parmesan Cheese Pasta – we like angel hair or thin spaghetti for this chicken primavera but you can also use shapes like penne pasta. Optional: add more colorful veggies like zucchini, bell pepper, broccoli, asparagus, peas, carrots, or onion. To the saucee you can also add a little bit of pasta water and a squeeze of lemon juice.
Suggestions for this Chicken Primavera Recipe
If you are able to use garden tomatoes and/or squash, do it! The summer flavor of garden fresh tomatoes can’t be beat. Make this chicken primavera with whole wheat noodles for extra fiber and nutrients. I love using fresh herbs from my garden, but you can find beautiful summer herbs in the grocery store in the produce section. Fresh is definitely best in this recipe. We love grilling our chicken on the outdoor grill, but you can certainly cook it on grill pan inside or even in bake in the oven.
