Cooked to perfection, the fluffy white interior is enhanced with butter, cheese, and bacon. Using the same concept, I transformed the traditional potato dish into a new classic side that is sure to wow guests on Thanksgiving and takes only 30 minutes from prep to dinner table! Introducing my Cheesy Roasted Potatoes with Bacon. It is a showstopper because of its rich flavors. I made sure not to spare on taste; you’ll notice by my choice to cook the potatoes in the reserved bacon drippings. This is definitely not necessary, but it sure does add a new depth of flavor that I’m not complaining about. And if there is any time of the year when I choose to indulge, it is definitely turkey day. To upgrade this side dish, a dollop of sour cream would be absolutely wonderful. Likewise, you can select a premium cut of bacon that is encrusted in coarse black pepper. There are also options for hickory-smoked and apple wood that may strike your fancy. Feel free to explore and try different variations as this potato side is super versatile. For the cheese, I chose sharp cheddar cheese, but you can opt for Parmesan or any cheese you like. Just look at the above golden-hued perfectly roasted mini potatoes, the melted shredded cheese, and then the crispy bacon bits…don’t you wish that Thanksgiving come sooner already?!
