Ingredients in Cheesecake Filled Strawberries
You only need a few simple ingredients to make these dreamy treats. Truly of of the best strawberry recipes in the world!
Strawberries – find fresh strawberries at local farmers markets or at the grocery store during the summer. Melted Chocolate – for these berries, I like to use Ghirardelli Milk Chocolate Chips because they melt evenly and taste delicious. Sprinkles or mini chocolate chips for decorating – these are optional but so fun to personalize for any occasion.
For the Cream Cheese Mixture:
Cream cheese – about four ounces for this recipe, which of course, can be doubled for extras. Make sure the cream cheese is at room temperature before mixing. Cool Whip – yep, one cup of the yummy whipped topping from the tub. Powdered sugar – start with half a cup or add more for extra sweetness. Vanilla extract – one teaspoon.
Variation to Cheesecake Filled Strawberries
For a yummy option without chocolate, you can dip the berries in crushed graham crackers. You can use a food processor to get perfect graham cracker crumbs that adhere to the moist berries. This option really gives you the flavors of strawberry cheesecake with a graham cracker crust.

Tips for Perfect Cheesecake Filled Strawberries
Use a small paring knife to slice the green stem off the top of the strawberry. The same sharp knife can be used to dig out the white inside of the fruit, making a small space for the cheesecake filling. Use a hand mixer to whisk together the cream cheese mixture ingredients in a large bowl until they’re smooth and light. Then refrigerate the bowl until your berries are dipped and ready for the filling. Use a Ziploc bag with a small hole cut in the corner, or a piping bag to add the cream cheese filling inside each berry.
Dipping Strawberries in Chocolate
I have a couple of secrets for how I dip these strawberries. I melt the chocolate in a glass cup. One of the short ones. Or a coffee mug works too. This seems to keep the chocolate at the right temperature longer and makes it so easy to dunk and dip. I also use chocolate chips or chocolate bars, not just any chocolate, but a good creamy chocolate brand. I think a lot of dipping chocolates you get at the grocery store are gross. For these strawberries I used Ghirardelli milk chocolate chips and they were incredible. I will sometimes chop up Dove chocolates or Cadbury too, all those chocolates are really creamy and yummy.
