The Art of the Caramelized Onion

Caramelizing onions isn’t hard, but it does take work. First, you need to use sweet onions. As these onions cook, their natural sugars caramelize, giving you the rich, brown color you are looking for. Next, you need to slice the onion thinly, about ⅛ inch thick. Too thin and your onions will burn at the bottom of the pan, too thick, and not enough of the onion is touching the pan to caramelize. Finally, the process. Be patient, it will take at least 45 minutes for your onions to turn a dark golden brown. As far as stirring the onions goes, when you first put them in the pan, let them stick to the bottom and get a golden crust before you start stirring them. After that, keep them moving every once in a while to prevent burning.
