Our friends at Camp Chef came up last week and we smoked up a mean brisket. As if the brisket wasn’t amazing enough on its own because it was, we had to take it to the next level and add it to a blue cheese stuffed burger. Oh man, you guys. I can’t even begin to tell you how good it was. First of all, we used sirloin ground beef for the burger patties. Then we stuffed the patties with tangy blue cheese, grilled them, and melted some creamy Havarti cheese over the top. All that, as it is, would be an amazing burger but we didn’t stop there. Oh, no. We added some homemade crispy onion straws and of course, a nice little helping of brisket. Smothered all that in some BBQ sauce and topped it off with a potato bun.

Ingredients for Blue Cheese Smoked Brisket Burgers

Make this hearty burger for your next cookout! It is layered with two types of meat, two kinds of cheese, onions, and barbeque sauce all held in with a potato hamburger bun. Delicious in every way!

Ground beef – We used ground sirloin for this recipe. Sirloin is known to be lean and has the most flavor. The price for the sirloin compared to ground beef is a large difference. Ground beef will also work well too! Blue cheese crumbles – Stuff the blue cheese crumbles into the burgers. As the burgers are being cooked, the cheese will melt. Every bite will have a cheesy deliciousness within it! Havarti cheese – Melt over top the Havarti cheese. This is a smooth cheese that is a creamy, pale yellow color. It has a buttery rich flavor to it. Smoked sliced brisket – This is the main event and the fireworks start to happen! Cook the brisket to perfection and slice it to add another amazing layer to the burgers. Onion straws – Make your own or buy them already fried from the grocery store. These onion straws are crispy and give a delicious crunch. BBQ sauce – Make a homemade bbq sauce or use your favorite kind. The sauce will drip and make your hands messy falling out the bottom, but it is worth every napkin! Potato hamburger buns – Being from Idaho, I just wanted a light and tasty bun that was a little different than a normal bun. It is thinner and gives a sweet flavor with savory ingredients. For an extra boost, toast the buns before layering the burger.

Homemade Onion Straws

Place sliced onion in a small bowl with buttermilk, cover, and place in the fridge for at least 30 minutes. In a bowl, combine flour, breadcrumbs, and seasoning salt. Remove onion from buttermilk and mix into the flour mixture until well combined. Heat oil in a deep skillet until hot and add onion straws in batches. Remove from oil when dark golden brown and crispy.

Yellow onion – Slice the onions however long and big you would like your onion straws. Buttermilk – The buttermilk will give the onions that creamy and soft texture on the inside. Flour – Helps build up the texture of the onions and holds the breadcrumbs on. Panko breadcrumbs – Gives texture and the outer crust to the onion straws. Seasoning salt – Adds in a blend of flavors! Oil – This is used to fry the onions to create the appearance of onion straws.

These burgers are thick patties that need more condiments, cheeses, and a tasty bun to add to the flavors. Choose all your favorites or have a spread for everyone to pick their own toppings. All together it makes a layered combination that is irresistible!

Cheese – Try other cheeses to use or add to the cheesy goodness with provolone cheese, American cheese, or swiss cheese. Toppings – We love the simplicity of the bbq sauce but have a condiment section for all to choose from! From classic toppings like lettuce, tomatoes, mustard, and ketchup, to a little more boost with bacon, mushrooms, and a sliced-up avocado. The toppings choices are endless! Buns – Substitute the bun for a traditional bun with seeds on it or a thicker bun like this brioche bun.
