Heat the apple bites over medium-low heat, and keep stirring until the sugar melts and the cinnamon is evenly distributed. Let cool down and sit aside. Next, make the batter. Beat light brown sugar, ground cinnamon, granulated sugar, and unsalted butter until smooth. Whisk in eggs and vanilla extract. Sift all-purpose flour and baking powder into the mixture.
