How To Make Apple Cider Glazed Chicken Thighs
This mouthwatering chicken recipe couldn’t get any easier. You’ll also need a cast-iron skillet or an oven-safe skillet for roasting. First, toss apple slices and cubed sweet potatoes in a bowl with 1 tablespoon of olive oil and chopped rosemary. Then, season the chicken thighs with salt and ground black pepper. Heat the cast-iron skillet with olive oil over medium-high heat, sear the chicken thighs with skin side down for a few minutes until golden brown and halfway cooked. Transfer to a plate. Next, whisk well apple cider, honey, and Dijon mustard and stir in the same skillet. Constantly stir and bring to a simmer. Return chicken thighs to the skillet and arrange apple slices, sweet potatoes, and 2 sprigs of rosemary around. Finally, transfer the skillet to the oven and bake for 15 to 20 minutes or until the chicken has cooked through and the sweet potatoes are tender. Serve immediately with fresh pomegranate sprinkled on top if desired.
